It’s been a while since I posted a new recipe, with moving home and the summer holidays I lost my baking mojo. I’m pleased to report that slowly but surely it seem’s to be creeping back.
So to kick off week 3 of the summer holidays I bring you a yummy summery muffin recipe that’s perfect for making with the kids, honey peach muffins.
These little beauties are perfect for picnics and for snacking on the go! They can also be adapted to be dairy, soya, gluten and wheat free.
You will need –
360g plain flour (I use Free From Fairy flour).
2 tsp baking powder.
4 tbsp natural yogurt. (I use Koko Dairy Free original plain yogurt alternative.)
280ml milk (I use Coconut Dream Original Plus Calcium Milk Alternative
2 tbsp honey.
200g peach slices in juice.
Firstly, combine the flour and baking powder before adding the milk, eggs and natural yogurt.
Fold the mixture until a thick batter forms.
Drain the peach slices and cut each slice into quarters.
Add the quartered peach slices to the mixture and fold until the peach disappears into the mixture.
Evenly distribute the mixture into 12 muffin cases and bake at 190 degrees (fan oven) for 15-20 minutes.
Freezer friendly. Store in an airtight container for 3-5 days.
