These little avocado chicken pops are fab for fussy eaters who are tempted by fun twists on somewhat mundane dishes – what’s even better is that they are also dairy, soya, wheat, gluten and egg free! You can even sneak in some avocado goodness – it’s fail proof!
You will need –
2 medium chicken breasts.
150g gluten-free breadcrumbs.
1 ripe avocado.
A drop of alternative milk.
Approx 150ml Oil, to fry.
Firstly, cut your chicken into evenly sized strips that are roughly 4cm thick.
Remove the seed from the avocado and scoop the remainder into a bowl, mash with a little alternative milk to achieve a smooth consistency, then coat each chicken strip in avocado before coating in the gluten-free breadcrumbs.
Heat the oil in a pan until sizzling, then place each pop into the oil and allow to shallow fry until golden brown. Flip the pops over and continue to fry until each side is crispy.
Remove any excess oil and your done!
